What’s for dinner? 

I am not a very good cook and struggle with ways to be healthy! Luckily for me my other half is really good at it, so my misfortune of not having that skill is not a huge problem. I will give cooking a go from time to time, but always manage to either burn something or it doesn’t seem to be cooked properly. Tonight I looked through a cook book for some inspiration and ideas of what I could cook myself! I found this perfect recipe, which seemed to tick all the boxes,

  • Healthy  – tick
  • Easy – tick
  • Minimal ingredients – tick

Perfect!

Jamie Oliver’s salmon fillets with green pesto and green beans!

Ingredients 

  • 2 handfuls of green beans
  • 2 lemons
  • 2 x 200g chunky salmon fillets, skin on
  • 2 heaped tablespoons green pesto
  • Olive oil
  • Salt and pepper

Method 

Preheat oven to 200c/400f/gas 6… Trim your beans…halve one of the lemons… Get yourself just under a metre of kitchen foil and fold it in half…put a handle of beans in the middle of the foil…lay a salmon fillet,skin down across the beans and spoon over a tablespoon of pesto… Drizzle with olive oil…squeeze the lemon over the salmon…season with salt and pepper…pull the foil together and scrunch them up to seal the parcel.

Place in the oven for 15 minutes… Serve with rice, new potatoes or crusty bread.

This dinner, was super easy to make and tasted amazing!! For cooks even like me!
